So the other day my husband and I hit up the local pub for breakfast. Their special was “Breakfast Quesadilla” and he ordered it. It was fantastic! I sat there thinking….we do burritos, why not quesadillas? Well, I decided to break it down and make an easy recipe to have in my arsenal of breakfast goodies! Enjoy!
Missy’s Breakfast Quesadillas
6 eggs (already scrambled and set aside)
8 ounces shredded cheese (whatever you have on hand!)
8 inch flour tortillas (one package, which is usually 8-10)
8 ounces crumbled cooked bacon or sausage or meat subst.
Salsa and sour cream
I like to use a big flat griddle to make these at 300 degrees. Warm a griddle that has been sprayed with cooking spray. Lay 2 tortillas and on one side layer: cheese, eggs, breakfast meat, then cheese again. Fold over to make a half moon. Allow to cook for about 3 minutes, then flip to make the other side crispy, about 2 minutes more. Turn out onto a cutting board and slice with a pizza slicer. Repeat until your quesadillas are all cooked. Serve with salsa and sour cream! Ole!
