Who doesn’t love a good tater tot casserole? Why not class them up a bit, or in our case, make them ahead for easy one-servimng breakfasts for my husband? These are delicious, and adorable! Enjoy!
Mini Tater-Tot Breakfast Casseroles
Ingredients:
Frozen tater tots
5 pieces bacon, cooked and chopped
9 large eggs
1.5 cups shredded cheese
1 cup buttermilk
Salt n Peppa
cooking spray
Directions:
Spray individual souffle cups with cooking spray. Place 6 tots in the bottom of each. Crumble in piece of cooked bacon over each. Whisk the eggs, buttermilk and cheese together with salt and pepper. Pour equally over the top.

Cook at 375 for about 35 minutes or until set ( I use a knife through the center and wait for it to come out dry) They should fall out of the cups very easily! Serve with toast and a big ole smile!

Looks great. Can they be made ahead of time and refirgerated for use through out the week? Would be a great breakfast to go.

It was really easy, and very little mess! They slid right out of the dishes as well!
Yes! I have been warming them up in the oven each morning and have microwaved one as well – they are firm as well, so not crumbly. Hubby puts them between toast!
Thank you Brandy! Yes, I make a lot of items that I portion and freeze! It is the best to be able to pull out chili from the freezer when you are exhauseted and have a delicious meal! I will be posting another chili recipe int he next week or so – Black bean and potato turkey chili!
Tater tot casserole is one of the casserole rights of passage when you get out of college. THEN you stop eating it for a decade becasue you can afford nicer things….then you circle around back becasue you crave it!! YUM!
