|Nothing says “I love you” like a delicious breakfast!!|
I will admit it. I don’t care who reads it. I love my husband like crazy. As most of you know we have tried for 3 years to become pregnant and have not been successful. Sad? Yes. Determined? You bet. Affected our marriage? Only made us stronger. Every couple gets to decide how something will affect them. Well, we decided that is a battle we would face together, and we are better for the challenges we have faced. In fact, we are fabulously happy and I still get butterflies! That baby will be loved when he/she is ready to hop aboard the SS MissyMaki for 9 months. That is for sure.
What I want to say is that love should be celebrated in the small things you do every day. Folding the laundry…… rubbing sore shoulders…..listening with ears open and mouths shut after a long, hard, tough day. Me? I like to make breakfast. I like to make beautiful breakfasts every morning that “normal people” eat on special occasions. I don’t think we are normal. I think we are the lucky ones, the ones who found their soul mates and have a very special child waiting to join their family….some how, some way, some day.
You know what???….THAT type of love deserves an EXTRA special breakfast sandwich. With FRESH BASIL!!!!
Basil, Egg & Sausage Breakfast Sandwich
2 tbsp milk
Salt and peppa
4 large basil leaves
2 slices American cheese ( or something fancier!)
1 Kaiser roll, toasted lightly
2 ounces chopped breakfast sausage, bacon, or turkey pepperoni ( optional)
Whisk the eggs and milk together and pour into pan at medium heat. When they start to set add 3 of the basil leaves (chopped coarsely) and the sausage. keep whisking around the pan, then allow to set together so that it will be in “one piece” for the sandwich (over scrambled the pieces will fall off the bun!). Salt and peppa to your liking and remove from the heat. Place one slice of the cheese on the bottom of the split and toasted Kaiser roll. Set the egg on top of that, then the second piece of cheese. Top with the last whole basil leaf and the top of the bun. Serve immediately!
