Dukan 2 Egg Breakfast

As come of you may know, I started the Dukan Diet to lose the pounds that crept up while going through infertility treatments as well as IVF which makes a mess of your hormones and your metabolism. 10 pounds crept up that was NOT there 3 years ago. I am not going to beat myself up, it has been a roller coaster to get to this point, and most pack on up to 30 pounds just going through the IVF alone, so I am a lucky gal.

So, I finished the first 5 day phase called ATTACK, and I lost 5.8 pounds. This diet is very lean foods and does require tons of water and daily exercise, a great way to reprogram your body to be a fat burner. I am now in the CRUISE phase which is a lot like the diet I try to keep in general. Lots of vegetables and lean protein and lean milk products. The first day I put 0.6 back on. I believe this is normal, and I should expect more results over the next week but that the results will slow down a bit as you start to incorporate a more balanced diet, and really, stay away from refined junk and sugars etc. We will see. I am so busy that this diet has not felt like a diet. I eat whatever I pack for lunch and finding lean proteins etc on a menu is pretty easy. I took a before pic and I plan to post an “after” I will post them both in about a month. Meanwhile I will try to add some of these lean recipes that I make up along the way!!

DISCLAIMER – I am ENTIRELY aware that I am losing “vanity pounds” and that my BMI is healthy and that I do not have a “weight” problem. But the older we get as women, the easier it is to see the creep of 5 pounds a year, etc. I want to try and find a good balance and a tool and lifestyle that will help me stay trim and healthy!

On to the recipe! I needed easy breakfasts that I have to think about. I whipped these up and I ate them all week. The GREAT thing about protein in the morning is is is a slow burner and it gives you energy that is not FALSE, like sugar.


  1. 8 eggs
  2. Cooking spray
  3. 4 tbsp Fat Free Cottage Cheese
  4. Fresh Herbs, salt and pepper to taste


Preheat oven to 350. Place 4 baking ramekins or mini souffle dishes on your cookie sheet. Spray very lightly with cooking spray. Crack 2 eggs into each dish and top with a tbsp each of cottage cheese. Add salt, pepper and some freshly snipped herbs (or dried) I used different kinds on each one, rosemary, oregano, sage, and plain. This offered my taste buds something new each morning. Bake for 25 minutes or until set. When cooled, place into individual zip locked baggies in a bowl in the fridge. When whipping up your lattes or coffee, microwave for 50 seconds on high!
